There are a couple of things that make really good red velvet cake recipes and add to that distinctive red velvet flavor and texture.
The combination of buttermilk and vinegar affect the acidity of the cake, which leads to the fluffy texture. Also, there's not enough cocoa powder to turn them into true chocolate cupcakes, but just enough to give a hint of that cocoa. Lastly, cream cheese frosting is a must for red velvet cake. Cream cheese frosting has a very different texture and taste from other types of frosting. I bake a lot of cupcakes, so the difference between piping the cream cheese frosting versus whipped cream or other types of frosting is very clear.
