Healthy Multigrain Wheat Cake Recipe

Even whole wheat flour can be made more nutritious by adding in a few more wholesome ingredients – giving us the Multi-Grain atta. It combines the goodness of various grains to give you a healthier and nutritious diet.
Rather than picking up a ready multi-grain flour from the market, you can simply prepare it at home where you know what you are eating!
Make your own Multigrain Atta
For preparing 10 kgs of multigrain flour, the ingredients needed are:
- Whole Wheat – 7 kgs
- Finger Millet or Ragi – 500 gms
- Pearl Millet or Bajra – 400 gms
- Sorghum or Jowar – 400 gms
- Bengal Gram or Channa Dal. Whole Channa can also be used – 400 gms
- Soya Beans – 400 gms
- Maize or Corn – 400 gms
- Barley – 200 gms
- Oats – 300 grams
Preparing the Multigrain Flour
First, clean all whole ingredients to remove dust particles or other impurities. Dry roast the ingredients except for oats and whole wheat grains till it gives out a nice aroma. Remove from heat and let it cool. Combine all ingredients and grind in a flour mill. Spread out the flour in a flat tray or area and let it cool to room temperature. Your multigrain flour is now ready to use. Store it in an airtight container.
The proportions can be varied according to your needs. This flour can effectively be used as a healthier replacement for maida in your puris, cakes, breads, and cookies.
Here’s a simple chocolate cake recipe that you can make using multigrain flour instead of maida.
Healthy Chocolate Cake Recipe with Multigrain Flour
Ingredients
- Multigrain Flour – 2 ¼ cups
- Eggs – 4
- Cocoa Powder – ¾ cup
- Powdered Sugar – 1 ¾ cup
- Unsalted Butter – ½ cup
- Baking Powder – 1 ½ teaspoon
- Baking Soda – ½ teaspoon
- Salt – A pinch
- Vegetable Oil – 1/3 cup
- Coffee or Water – ½ cup
- Milk – 1 cup
- Vanilla essence – 1 teaspoon
Instructions
Preheat the oven to 350F.
Prepare a cake tin by greasing with oil and dusting with some flour.
Sieve the multigrain flour, baking powder & baking soda into a large mixing bowl so as to remove any lumps.
To this, add a pinch of salt.
Sift the cocoa powder into the mixture and add the powdered sugar.
Mix all the ingredients well. After adding butter, mix the ingredients with an electric beater.
Pour in oil little by little while continually beating the mixture. Keep stirring until the mixture becomes granular.
In a small bowl, mix coffee or water with Vanilla extract and milk, mixing it into the flour mixture.
Blend well with the beater again keeping it at low speed.
Break in the eggs one by one while beating the flour mixture at medium-high speeds.
Keep beating till the batter gets thin and fluffy.
Transfer the cake batter into a tin and bake in the oven for 30 – 35 minutes. Check for readiness with a toothpick.
